Ingredients:
- 2 fillets of white fish
- 2 limes, juiced
- Small bunch of coriander, chopped
- 2 cloves of garlic, crushed
- 1 onion
- 2 green peppers
- 2 tomatoes
- 2 tsp olive oil
- 50g coconut cream
- 1 tbsp tomato puree
- 150ml boiling water
Method:
- Place the fish fillets in a large saucepan and add the lime juice, coriander and crushed garlic. Set aside.
- While the fish is marinating, dice the onion, and green peppers. Then skin, deseed and dice the tomatoes.
- Top the fish with the chopped onion, green pepper, tomatoes and olive oil.
- Break the coconut cream into small pieces and place in a bowl with the tomato puree. Add the boiling water and stir well to dissolve the coconut cream.
- Add the coconut and tomato liquid to the pan of fish and vegetables. Set the pan over a low heat and simmer for 25 minutes.
- Serve with brown rice and seasonal vegetables.
